It is relatively stable to pH fluctuations and heat, with efficacy influenced by polymerization degree and environmental conditions.
Originated in Japan, it inhibits microbial growth (especially Gram-positive bacteria) at concentrations as low as 5 ppm. It is highly water-soluble and can be metabolized into lysine by proteases.
