Neotame is a high-intensity sweetener and flavor enhancer approved for use in most foods except meat and poultry products. It is 7,000–13,000 times sweeter than sucrose with a clean and pure sweet taste. Structurally, it is a dipeptide derivative of aspartic acid and phenylalanine. It can be well blended with nutritive sweeteners such as sucrose and high fructose corn syrup, as well as other high-intensity sweeteners including aspartame and sucralose. It is widely applied in beverages, baked goods, desserts and cereals. It also functions as a flavor booster in products like mint chewing gum, enriching the taste profile without adding calories.
